This pie is one of my favorites. Quintessentially tart, yet perfectly sweet, with just the right balance of spice—andthe ruby like color is spot on for Christmas or New Years. Use your own recipe for a double crust, or try my recipe for Tender Pie Dough. The beauty of this delicious streusel topped pie is that you are going to create a double crusted pie with only one piece of dough. It is a quick and easy technique that I use every time I make a fruit pie. You will love this method and I know you will use it on all of your pies as well. This pie will not disappoint!

Thanksgiving is right around the corner and it is time to start thinking about what you are going to serve for dessert. You can always go to a local bakery, but it is much more rewarding to make you own. The aroma of the pie baking in the oven is intoxicating. The best part is that you have made it yourself and it will be better than almost anything you will buy at the store —except, if you have ordered you pies from our bakery. What makes this pie special, is that you only have to roll out one piece of dough to make the crust. I roll a single large disk of dough that can be folded and pleated around the fruit. BAKERS NOTE: I would like to point out that you will see three recipes below, Tender Pie Dough, Apple Filling and Streusel. Do not feel overwhelmed, they are just different components that you will need in order to complete the pie. I like to separate the ingredients so that your mind can focus on each of them one at a time.
